Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (any color will do!)
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3 minutes until translucent, then add minced garlic and cook for 30 seconds.
  2. Add ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
  3. Add sliced bell pepper, zucchini, and cherry tomatoes, along with oregano, salt, and pepper. Cook for 5 minutes until veggies are tender but crisp.
  4. Remove from heat and garnish with fresh parsley before serving.
