- 1 pound ground beef
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced (any color will do!)
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onion for 3 minutes until translucent, then add minced garlic and cook for 30 seconds.
- Add ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
- Add sliced bell pepper, zucchini, and cherry tomatoes, along with oregano, salt, and pepper. Cook for 5 minutes until veggies are tender but crisp.
- Remove from heat and garnish with fresh parsley before serving.
