  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Flatten chicken breasts between plastic wrap to 1/2 inch thickness.
  2. Set up a breading station with flour, whisked eggs, and a mixture of breadcrumbs, garlic powder, oregano, salt, pepper, and Parmesan.
  3. Dredge chicken in flour, dip in eggs, and coat with breadcrumb mixture.
  4. Cook breaded chicken in heated olive oil for 4-5 minutes per side until golden brown.
  5. Drain on paper towels, squeeze lemon juice on top, and garnish with parsley before serving.
