- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably made from day-old bread)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- Juice of 1 lemon
- Fresh parsley for garnish
Instructions
- Flatten chicken breasts between plastic wrap to 1/2 inch thickness.
- Set up a breading station with flour, whisked eggs, and a mixture of breadcrumbs, garlic powder, oregano, salt, pepper, and Parmesan.
- Dredge chicken in flour, dip in eggs, and coat with breadcrumb mixture.
- Cook breaded chicken in heated olive oil for 4-5 minutes per side until golden brown.
- Drain on paper towels, squeeze lemon juice on top, and garnish with parsley before serving.
