  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 3 large potatoes, peeled and cubed
  • 1 cup milk
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine ground beef, breadcrumbs, Parmesan, parsley, onion, garlic, egg, Worcestershire sauce, salt, and pepper.
  2. Shape the mixture into a loaf in a loaf pan or on a baking sheet.
  3. Bake for 45 minutes.
  4. Boil cubed potatoes until fork-tender, about 15 minutes, then drain.
  5. Add milk, butter, and half of the cheddar to the potatoes and mash until smooth.
  6. After baking, top the meatloaf with remaining cheddar and return to the oven for 5 minutes until cheese is melted.
