To make this delightful meatloaf with mashed potatoes and cheese, gather the following ingredients:
- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
- 3 large potatoes, peeled and cubed
- 1 cup milk
- 4 tablespoons butter
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine ground beef, breadcrumbs, Parmesan, parsley, onion, garlic, egg, Worcestershire sauce, salt, and pepper.
- Shape the mixture into a loaf in a loaf pan or on a baking sheet.
- Bake for 45 minutes.
- Boil cubed potatoes until fork-tender, about 15 minutes, then drain.
- Add milk, butter, and half of the cheddar to the potatoes and mash until smooth.
- After baking, top the meatloaf with remaining cheddar and return to the oven for 5 minutes until cheese is melted.
