Delicious and easy-to-make muffins using leftover mashed potatoes and cheese.

Ingredients

  • 2 cups of leftover mashed potatoes
  • 1 cup of shredded cheese (cheddar works great!)
  • 1/2 cup of milk
  • 2 large eggs
  • 1/2 cup of all-purpose flour
  • 1/4 cup of green onions, chopped
  • 1 teaspoon of baking powder
  • Salt and pepper to taste
  • Optional: crispy bacon bits or herbs for extra flavor

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix mashed potatoes, cheese, milk, and eggs until smooth.
  3. Gently fold in flour, baking powder, salt, and pepper.
  4. Add green onions and optional ingredients, mixing until just combined.
  5. Grease muffin tin and fill each cup two-thirds full with batter.
  6. Bake for about 20 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the tin for a few minutes, then transfer to a wire rack and serve warm.
