- 2 cups of leftover mashed potatoes
- 1 cup of shredded cheese (cheddar works great!)
- 1/2 cup of milk
- 2 large eggs
- 1/2 cup of all-purpose flour
- 1/4 cup of green onions, chopped
- 1 teaspoon of baking powder
- Salt and pepper to taste
- Optional: crispy bacon bits or herbs for extra flavor
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix mashed potatoes, cheese, milk, and eggs until smooth.
- Gently fold in flour, baking powder, salt, and pepper.
- Add green onions and optional ingredients, mixing until just combined.
- Grease muffin tin and fill each cup two-thirds full with batter.
- Bake for about 20 minutes until golden brown and a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack and serve warm.
