Delicious fluffy mashed potato muffins, perfect for using up leftovers.

Ingredients

  • 2 cups mashed potatoes (preferably leftover)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated cheese (cheddar works great)
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Optional: chives or green onions for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease the muffin tin or line it with muffin liners.
  3. In a bowl, mix mashed potatoes, flour, cheese, milk, egg, baking powder, salt, and pepper until smooth.
  4. Scoop the mixture into muffin cups, filling them about 3/4 full.
  5. Bake for about 25 minutes until golden and a toothpick comes out clean.
  6. Cool for a few minutes, then remove from the tin and serve warm or at room temperature.
