- 2 cups mashed potatoes (preferably leftover)
- 1/2 cup all-purpose flour
- 1/4 cup grated cheese (cheddar works great)
- 1/4 cup milk
- 1 large egg
- 1 teaspoon baking powder
- Salt and pepper to taste
- Optional: chives or green onions for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Grease the muffin tin or line it with muffin liners.
- In a bowl, mix mashed potatoes, flour, cheese, milk, egg, baking powder, salt, and pepper until smooth.
- Scoop the mixture into muffin cups, filling them about 3/4 full.
- Bake for about 25 minutes until golden and a toothpick comes out clean.
- Cool for a few minutes, then remove from the tin and serve warm or at room temperature.

- Great for brunch or as a side dish.
- Can add herbs for extra flavor.
