For the Shrimp:

  • 1 pound shrimp, peeled and deveined
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 3 cloves garlic, minced

For the Sauce:

  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth (or vegetable broth)
  • ¾ cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh basil for garnish

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente.
  3. Drain and set aside.

Step 2: Cook the Shrimp

  1. In a large skillet, heat the butter and olive oil over medium heat.
  2. Season the shrimp with paprika, salt, black pepper, and red pepper flakes.
  3. Add the shrimp to the skillet and cook for 2 to 3 minutes per side until pink and opaque.
  4. Remove shrimp from the skillet and set aside.

Step 3: Make the Creamy Sauce

  1. In the same skillet, add more butter if needed and sauté the garlic for 30 seconds until fragrant.
  2. Stir in the sun-dried tomatoes and cook for 1 minute.
  3. Pour in the chicken broth and let it simmer for 2 minutes.
  4. Add the heavy cream, parmesan cheese, and Italian seasoning, stirring until the sauce is smooth.
  5. Let the sauce simmer for 3 to 4 minutes until slightly thickened.

Step 4: Combine Everything

  1. Return the shrimp to the skillet and toss to coat in the sauce.
  2. Add the cooked pasta, stirring until everything is well combined.
  3. Taste and adjust the seasoning if needed.

Step 5: Garnish and Serve

  • Top with fresh basil and an extra sprinkle of parmesan cheese.
  • Serve immediately.

  • For a Lighter Version: Swap heavy cream for half-and-half or Greek yogurt.
