- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 1/4 cup tequila (optional, but it adds a kick!)
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Whisk together olive oil, lime juice, tequila, garlic, honey, chili powder, cumin, salt, and pepper in a bowl to create the marinade.
- Marinate the shrimp in the mixture for at least 30 minutes in the refrigerator.
- If using wooden skewers, soak them in water for 30 minutes.
- Thread the marinated shrimp onto skewers, leaving space between pieces.
- Preheat the grill to medium-high and grill the kabobs for 2-3 minutes on each side until shrimp are pink and opaque.
- Remove from the grill, let rest, and serve with lime wedges and cilantro.
Notes
- For optimal flavor, marinate the shrimp for up to 2 hours.
- Alternate shrimp with vegetables for added flavor and color.
