Delicious and flavorful Margarita Grilled Shrimp Kabobs, perfect for grilling season.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 cup tequila (optional, but it adds a kick!)
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. Whisk together olive oil, lime juice, tequila, garlic, honey, chili powder, cumin, salt, and pepper in a bowl to create the marinade.
  2. Marinate the shrimp in the mixture for at least 30 minutes in the refrigerator.
  3. If using wooden skewers, soak them in water for 30 minutes.
  4. Thread the marinated shrimp onto skewers, leaving space between pieces.
  5. Preheat the grill to medium-high and grill the kabobs for 2-3 minutes on each side until shrimp are pink and opaque.
  6. Remove from the grill, let rest, and serve with lime wedges and cilantro.

Notes

  • For optimal flavor, marinate the shrimp for up to 2 hours.
  • Alternate shrimp with vegetables for added flavor and color.
