Instructions
- Wash and prepare the ingredients: dice mangoes, cucumber, and red bell pepper; slice the red onion; chop the cilantro.
- Whisk together lime juice and olive oil in a small bowl; season with salt and pepper.
- In a large bowl, combine all prepared ingredients and pour the dressing over; toss gently.
- Chill in the refrigerator for 30 minutes before serving.
