Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan.
  3. In a large bowl, whisk together eggs, vegetable oil, applesauce, and honey (or maple syrup).
  4. In another bowl, mix whole wheat flour, almond flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Fold in grated zucchini and any optional nuts or chocolate chips.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
