Instructions
- Gather all ingredients and prepare by chopping the lobster and thawing the corn if frozen.
- In a bowl, mix lobster, corn, red onion, mayonnaise, lemon juice, and cilantro, seasoning with salt and pepper.
- Slice avocados in half, remove the pit, and scoop out some flesh for a larger cavity.
- Fill each avocado half with the lobster mixture, packing it in nicely.
- Arrange on a platter, garnish with cilantro or lemon juice, and serve immediately.
