- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes with green chilies
- 1 packet chili seasoning mix
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 tbsp olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Cook the elbow macaroni in salted boiling water until al dente, then drain.
- In a skillet, heat olive oil and brown the ground beef or turkey, seasoning with salt and pepper.
- Add kidney beans, diced tomatoes, and chili seasoning; simmer for 5 minutes.
- Stir in the cooked macaroni, milk, and half of the cheddar cheese; combine and heat through for 3-4 minutes.
- Top with remaining cheese, cover, and let melt.

- Can substitute ground turkey for ground beef for a leaner option.
- Feel free to add more chili seasoning for extra spice.
