To make these Loaded Cheeseburger Stuffed Peppers, you will need the following ingredients:
- 4 large bell peppers (any color)
- 1 pound ground beef (or turkey for a lighter option)
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tablespoon mustard
- Salt and pepper to taste
- Optional toppings: diced tomatoes, pickles, and additional cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Wash and slice the tops off the bell peppers, removing seeds and membranes.
- In a skillet, sauté onions and garlic until translucent, then add ground beef (or turkey) and cook until browned.
- Drain excess fat, then mix in cooked rice, ketchup, mustard, and half of the cheese. Season with salt and pepper.
- Spoon the mixture into each bell pepper.
- Place the stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil, add remaining cheese, and bake for another 5-10 minutes until cheese is melted.
