To make these Loaded Cheeseburger Stuffed Peppers, you will need the following ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef (or turkey for a lighter option)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, pickles, and additional cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and slice the tops off the bell peppers, removing seeds and membranes.
  3. In a skillet, sauté onions and garlic until translucent, then add ground beef (or turkey) and cook until browned.
  4. Drain excess fat, then mix in cooked rice, ketchup, mustard, and half of the cheese. Season with salt and pepper.
  5. Spoon the mixture into each bell pepper.
  6. Place the stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil, add remaining cheese, and bake for another 5-10 minutes until cheese is melted.
