    • 1 ½ cups graham cracker crumbs
    • ½ cup melted butter
    • ¼ cup sugar

    • 2 packages (8 oz each) cream cheese, softened
    • 1 cup brown sugar
    • 1 teaspoon vanilla extract
    • 3 large eggs
    • 1 cup butterscotch chips
  • For the topping:
    • 1 cup whipped cream
    • ¼ cup butterscotch sauce
    • Chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar.
  2. Press mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.
  3. Beat cream cheese until smooth, then add brown sugar and vanilla. Mix in eggs one at a time, then fold in butterscotch chips.
  4. Pour filling over the cooled crust and bake for 40 minutes until edges are firm.
  5. Cool in the oven with the door ajar, then refrigerate for at least 4 hours.
  6. Top with whipped cream and butterscotch sauce before serving.
