- For the crust:
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
- ¼ cup sugar
- For the cheesecake filling:
- 2 packages (8 oz each) cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup butterscotch chips
- For the topping:
- 1 cup whipped cream
- ¼ cup butterscotch sauce
- Chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar.
- Press mixture into a 9-inch springform pan and bake for 10 minutes. Let cool.
- Beat cream cheese until smooth, then add brown sugar and vanilla. Mix in eggs one at a time, then fold in butterscotch chips.
- Pour filling over the cooled crust and bake for 40 minutes until edges are firm.
- Cool in the oven with the door ajar, then refrigerate for at least 4 hours.
- Top with whipped cream and butterscotch sauce before serving.
Notes
- For best flavor, refrigerate overnight before serving.
- Optional: Add chopped nuts for extra crunch.
