Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Beat softened butter and sugar until light and fluffy.
- Add eggs, vanilla extract, and lemon zest; beat until smooth.
- Gradually combine dry ingredients with wet mixture, alternating with limoncello.
- Pour batter into the prepared pan and bake for 30-35 minutes until a toothpick comes out clean.
- Cool the cake in the pan for 15 minutes, then turn it out to cool completely on a wire rack.
- Mix mascarpone cheese with powdered sugar and limoncello for the drizzle.
- Once cooled, drizzle the mascarpone mixture on top and dust with powdered sugar before serving.
