To make a delicious Lentil and Potato Soup, you’ll need the following ingredients:
- 1 cup lentils (green or brown)
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks of celery, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth (or chicken broth)
- 1 teaspoon cumin
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse lentils and prepare vegetables (potatoes, onion, carrots, celery).
- Heat olive oil in a pot, then sauté onion, carrots, and celery for about 5 minutes.
- Add garlic, cumin, and thyme; cook for 1 minute.
- Combine lentils, potatoes, and broth; bring to a boil, then simmer for 30 minutes.
- Season with salt and pepper, then serve.
