- 2 medium zucchinis
- 8 oz pasta of your choice (spaghetti or penne works well)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon (zest and juice)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Wash and spiralize or slice zucchinis into thin strips; set aside.
- Boil salted water, add pasta, and cook until al dente; drain and reserve some pasta water.
- Heat olive oil in a skillet, add minced garlic, and sauté until fragrant.
- Add zucchini noodles to the skillet, sauté for 2-3 minutes, then combine with cooked pasta.
- Add lemon juice and zest, stir in Parmesan, and season with salt and pepper; add reserved pasta water if needed.
- Plate the dish and garnish with fresh basil leaves.
