A light and refreshing Lemon Zucchini Pasta, perfect for a quick meal.

Ingredients

  • 2 medium zucchinis
  • 8 oz pasta of your choice (spaghetti or penne works well)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Wash and spiralize or slice zucchinis into thin strips; set aside.
  2. Boil salted water, add pasta, and cook until al dente; drain and reserve some pasta water.
  3. Heat olive oil in a skillet, add minced garlic, and sauté until fragrant.
  4. Add zucchini noodles to the skillet, sauté for 2-3 minutes, then combine with cooked pasta.
  5. Add lemon juice and zest, stir in Parmesan, and season with salt and pepper; add reserved pasta water if needed.
  6. Plate the dish and garnish with fresh basil leaves.
