Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze out excess moisture.
- Cream together softened butter and sugar, then add eggs and vanilla.
- Fold in grated zucchini, lemon zest, and lemon juice.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture and stir gently.
- Grease a loaf pan and pour the batter into it.
- Bake for 50-60 minutes, checking doneness with a toothpick.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

- Ensure to squeeze out as much moisture from the zucchini as possible.
