Ingredients

  • 1 cup of crushed digestive biscuits
  • 1/2 cup of cream cheese, softened
  • 1/4 cup of powdered sugar

  • 1 cup of white chocolate chips
  • A pinch of salt
  • Coconut flakes (for rolling)

Instructions

  1. Crush the digestive biscuits until fine.
  2. Mix cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
  3. Fold in the crushed biscuits, cover, and refrigerate for 30 minutes.
  4. Roll the mixture into 1-inch balls.
  5. Melt white chocolate, dip each truffle, and roll in coconut flakes.
  6. Chill on a baking sheet for another 30 minutes to set.
