- 1/4 cup of powdered sugar
- 1/4 cup of lemon juice (freshly squeezed is best)
- 1 tablespoon of lemon zest
- 1 cup of white chocolate chips
- A pinch of salt
- Coconut flakes (for rolling)
Instructions
- Crush the digestive biscuits until fine.
- Mix cream cheese, powdered sugar, lemon juice, and lemon zest until smooth.
- Fold in the crushed biscuits, cover, and refrigerate for 30 minutes.
- Roll the mixture into 1-inch balls.
- Melt white chocolate, dip each truffle, and roll in coconut flakes.
- Chill on a baking sheet for another 30 minutes to set.
Notes
- Use fresh lemon juice for the best flavor.
- If the mixture is too sticky, chill it for an additional 10 minutes.
