To make this zesty lemon ricotta pasta, you’ll need the following ingredients:
- 8 oz of your favorite pasta (spaghetti or penne work great)
- 1 cup of ricotta cheese
- 1 cup of fresh spinach, chopped
- 1 lemon (juiced and zested)
- 2 tablespoons of olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Boil salted water, add pasta, and cook until al dente (8-10 minutes).
- In a skillet, heat olive oil and sauté minced garlic for 1 minute.
- Add chopped spinach and stir until wilted (2-3 minutes).
- Drain pasta, add it to the skillet with spinach, then mix in ricotta, lemon juice, and zest.
- Season with salt and pepper, serve warm with Parmesan cheese and extra lemon zest.
Notes
- Feel free to use any pasta type you prefer.
- Adjust lemon juice and zest to taste for more or less zing.
