- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs (preferably panko for extra crunch)
- ½ cup grated Pecorino Romano cheese
- 1 lemon (zested and juiced)
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Cooking oil (olive oil or vegetable oil)
Instructions
- Pound the chicken breasts to an even thickness and season with salt and pepper.
- Set up a dredging station with flour, a whisked egg mixture with lemon juice, and a breadcrumb mixture with cheese and spices.
- Dredge each chicken breast in flour, dip in the egg mixture, then coat with the breadcrumb mixture.
- Heat oil in a skillet and cook the chicken for 5-7 minutes on each side until golden brown and cooked through.
- Drain on paper towels and serve warm with lemon slices and herbs.
