- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup lemon juice (freshly squeezed is best!)
- 2 tablespoons lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
Instructions
- Preheat oven to 350°F (175°C).
- Grease an 8×8 inch baking dish.
- Mix oats, flour, brown sugar, baking powder, and salt in a bowl.
- Add butter, egg, lemon juice, and lemon zest; mix until crumbly.
- Press half of the mixture into the bottom of the baking dish.
- Bake for 15 minutes until slightly golden.
- Spread remaining mixture on top.
- Bake again for 15 minutes.
- Cool in the pan, cut into squares, and serve.
Notes
- For best flavor, use freshly squeezed lemon juice.
- Store leftovers in an airtight container at room temperature.
