- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup carrots, sliced
- 1 cup celery, sliced
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot, sauté onion until translucent, then add garlic, ginger, and turmeric; cook for 2 minutes.
- Pour in chicken broth, bring to a simmer, and add carrots and celery; stir well.
- Add shredded chicken, stir, and let simmer for 10 minutes.
- Remove from heat, squeeze in lemon juice, and season with salt and pepper.
- Garnish with fresh parsley and serve hot.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth and omit chicken.
- Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
