- 8 oz spaghetti or pasta of choice
- 2 chicken breasts, boneless and skinless
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- Juice and zest of 1 lemon
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Prepare all ingredients: chop chicken, mince garlic, and zest/juice lemon.
- Boil salted water and cook pasta until al dente, about 8-10 minutes.
- In a skillet, heat olive oil and sauté chicken until golden brown, about 5-7 minutes.
- Add minced garlic to the skillet and sauté until fragrant, about 1-2 minutes.
- Pour in chicken broth and heavy cream, simmer for 3-4 minutes until thickened.
- Stir in parmesan cheese, lemon juice, and zest until smooth.
- Add cooked pasta to the skillet and toss to coat in the sauce.
- Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- Use whole wheat pasta for a healthier option.
