Here’s what you’ll need to whip up this incredible Korean Carrot Salad:
- 4 medium carrots, julienned or grated
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon sugar (or honey)
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Sesame seeds for garnish
Instructions
- Wash and peel the carrots, then julienne or grate them.
- In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic, and ginger to make the dressing.
- In a large mixing bowl, combine carrots, red bell pepper, green onions, and cilantro, then pour the dressing over and toss to coat.
- Cover and let the salad marinate in the refrigerator for at least 30 minutes.
- Serve and enjoy, garnished with sesame seeds.
