  • 4 medium carrots, julienned or grated
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar (or honey)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Sesame seeds for garnish

Instructions

  1. Wash and peel the carrots, then julienne or grate them.
  2. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, garlic, and ginger to make the dressing.
  3. In a large mixing bowl, combine carrots, red bell pepper, green onions, and cilantro, then pour the dressing over and toss to coat.
  4. Cover and let the salad marinate in the refrigerator for at least 30 minutes.
