To whip up this delicious casserole, you’ll need the following ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 ounces of fresh mushrooms, sliced
  • 1 cup of heavy cream
  • 1 cup of shredded mozzarella cheese
  • 4 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté the chicken breasts for 5-7 minutes on each side until golden brown. Remove and set aside.
  3. Add mushrooms and garlic to the skillet, sauté until tender.
  4. Pour in heavy cream and Italian seasoning, simmer for 2-3 minutes.
  5. Place chicken in a baking dish, cover with the mushroom cream mixture and top with mozzarella.
  6. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly.
