- 8 oz. spaghetti or your favorite pasta
- 1 lb. large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 1 small onion, chopped
- 1 teaspoon Jamaican jerk seasoning
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil salted water and cook spaghetti until al dente, then drain.
- Heat olive oil in a skillet, add onion and bell pepper, and sauté for 5 minutes.
- Add garlic and shrimp, cooking until shrimp turns pink (3-4 minutes).
- Sprinkle in jerk seasoning and mix well.
- Pour in coconut milk and simmer for 5 minutes.
- Add cooked pasta, toss to coat, and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
