- 2 cups cooked chicken, shredded
- 1 cup mayonnaise
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper (red or green)
- 1/4 cup sliced black olives
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Shred the cooked chicken and place it in a large bowl.
- Mix in mayonnaise, celery, red onion, bell pepper, black olives, Parmesan cheese, Italian seasoning, salt, and pepper.
- Cover and chill in the refrigerator for at least 30 minutes.
- Stir before serving and garnish with fresh parsley.

- For convenience, you can use rotisserie chicken.
- Chilling the salad allows flavors to blend.
