Ingredients

  • 1 package of puff pastry (thawed)
  • 3 ripe peaches (peeled and diced)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 egg (for egg wash)
  • 1/4 cup butter (melted)
  • Powdered sugar (for dusting)

Instructions

  1. In a bowl, combine peaches, sugar, lemon juice, cinnamon, and cornstarch. Let it sit for 10 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Roll out the puff pastry on a floured surface to 1/4 inch thick.
  4. Cut the pastry into 4×4 inch squares.
  5. Place a tablespoon of peach filling in the center of each square and fold the corners to seal.
  6. Grease a muffin pan with melted butter.
  7. Place the filled pastry in the muffin cups, brush with butter, and sprinkle with sugar.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool slightly and dust with powdered sugar before serving.
