- 3 ripe peaches (peeled and diced)

Instructions
- In a bowl, combine peaches, sugar, lemon juice, cinnamon, and cornstarch. Let it sit for 10 minutes.
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface to 1/4 inch thick.
- Cut the pastry into 4×4 inch squares.
- Place a tablespoon of peach filling in the center of each square and fold the corners to seal.
- Grease a muffin pan with melted butter.
- Place the filled pastry in the muffin cups, brush with butter, and sprinkle with sugar.
- Bake for 20-25 minutes until golden brown.
- Cool slightly and dust with powdered sugar before serving.
