Ingredients

- 2 cups of chicken breast, diced
- 1 cup of rice (preferably long-grain)
- 4 cups of chicken broth
- 1 cup of heavy cream
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas and carrots mix
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 tablespoon of olive oil
- 1 teaspoon of Italian seasoning (optional)
Instructions
- Sauté chicken in olive oil until browned.
- Add onions and garlic; sauté until fragrant.
- Stir in the rice and toast for a minute.
- Pour in the chicken broth and scrape the pot’s bottom.
- Add cream, peas, carrots, salt, pepper, and Italian seasoning; stir.
- Seal the lid and pressure cook on high for 10 minutes, then natural release for 10 minutes.
- Fluff rice with a fork and serve hot.
