Ingredients

- 2 pounds baby potatoes (or any small potatoes)
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the baby potatoes as needed.
- In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, onion powder, salt, and pepper until smooth.
- Toss the potatoes in the honey mustard mixture until coated.
- Spread the potatoes on a parchment-lined baking sheet in a single layer.
- Roast for 25-30 minutes, tossing halfway through, until golden brown and tender.
- Garnish with chopped parsley before serving.

- Adjust the amount of honey and mustard to taste.
- Can substitute other small potatoes if desired.
