Description

Deliciously roasted baby potatoes coated in a sweet and tangy honey mustard sauce.


Ingredients

  • 2 pounds baby potatoes (or any small potatoes)
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the baby potatoes as needed.
  3. In a bowl, mix honey, Dijon mustard, olive oil, garlic powder, onion powder, salt, and pepper until smooth.
  4. Toss the potatoes in the honey mustard mixture until coated.
  5. Spread the potatoes on a parchment-lined baking sheet in a single layer.
  6. Roast for 25-30 minutes, tossing halfway through, until golden brown and tender.
  7. Garnish with chopped parsley before serving.
