- 2 cups cooked chicken, shredded or diced

- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup shredded carrots
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Prepare the chicken by seasoning it and cooking it in a skillet until no longer pink, then shred or dice.
- In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar for the dressing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots, then add the cooked chicken.
- Pour the dressing over the salad and toss gently until well combined. Serve immediately.
Notes
- Adjust the sweetness of the dressing by adding more honey if desired.
- For a heartier salad, add nuts or seeds for extra crunch.
