  • 1/4 cup shredded carrots
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by seasoning it and cooking it in a skillet until no longer pink, then shred or dice.
  2. In a small bowl, whisk together honey, Dijon mustard, and apple cider vinegar for the dressing.
  3. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and shredded carrots, then add the cooked chicken.
