- 2 boneless, skinless chicken breasts
- 1 cup jasmine rice
- 1/4 cup honey
- 1/4 cup lime juice (fresh is best!)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
- Optional: diced avocado and lime wedges for serving
Instructions
- Rinse jasmine rice and cook according to package instructions.
- Mix honey, lime juice, soy sauce, olive oil, garlic, cumin, salt, and pepper to create the marinade.
- Marinate chicken breasts for at least 10 minutes.
- Cook the chicken in a skillet over medium-high heat for 6-7 minutes on each side, or bake at 400°F for 20-25 minutes.
- Slice the chicken, fluff the rice, and assemble the bowls with chicken, cilantro, and optional toppings.
Notes
- For best flavor, marinate the chicken for an hour if possible.
- Serve with diced avocado and lime wedges for extra zest.
