Ingredients
Scale
To make this delightful casserole, you’ll need the following ingredients:
- 2 cups of corn kernels (fresh or frozen)
- 1 cup of sweetened condensed milk
- 2 large eggs
- 1/3 cup of honey
- 1/4 cup of butter, melted
- 1 teaspoon of vanilla extract
- 1 cup of shredded cheddar cheese
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 cup of crushed cornflakes (optional, for topping)
These ingredients are easy to find and can be adjusted according to your preferences. I often use fresh corn during the summer, but frozen corn works beautifully too!
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together sweetened condensed milk, eggs, honey, melted butter, and vanilla extract until smooth.
- Fold in corn kernels, salt, and black pepper until well combined.
- Gently mix in shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish and sprinkle crushed cornflakes on top if desired.
- Bake for about 40 minutes until set and golden on top.
- Let cool for a few minutes before serving.
Notes
- Feel free to use fresh or frozen corn based on availability.
