- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 cup bell peppers, diced
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix ground meat, rice, breadcrumbs, Parmesan, egg, honey, soy sauce, garlic, ginger, salt, and pepper.
- Form small meatballs and place them on a lined baking sheet.
- Bake the meatballs for 20 minutes until golden brown.
- In a separate bowl, mix bell peppers with remaining honey and soy sauce.
- Add baked meatballs to the rice mixture in a baking dish and stir gently.
- Bake for an additional 10 minutes to meld flavors.
