- 1 cup of cornmeal

- 1 cup of buttermilk
- 2 large eggs
- 1/4 cup of unsalted butter, melted
- 1/2 cup of honey
- 1/4 cup of additional honey for drizzling
Instructions
- Preheat oven to 400°F (200°C).
- Mix cornmeal, flour, baking powder, salt, and sugar in a bowl.
- In another bowl, whisk buttermilk, eggs, melted butter, and honey.
- Combine wet and dry ingredients, stirring gently.
- Grease muffin tin and fill each cup with batter.
- Bake for 20 minutes until golden and a toothpick comes out clean.
- Let cool slightly and drizzle with extra honey.
