- 2 slices of sourdough bread
- 4 ounces of grilled chicken, sliced
- 1/4 cup of Chipotle mayo
- 1/2 cup of shredded Monterey Jack cheese
- 1/4 cup of fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Slice the grilled chicken and ensure it’s warm if pre-cooked.
- Mix Chipotle mayo with salt and pepper in a bowl.
- Spread mayo on one side of each bread slice, layer with chicken, cheese, and cilantro, then top with the second slice.
- Cook the sandwich in a skillet over medium heat for 3-4 minutes on each side until golden and melted.
- Remove, let cool, slice, and serve.
