This delicious beef casserole combines ground beef, mixed vegetables, and cheese for a hearty meal.

Ingredients

  • 1 pound ground beef
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice or pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet and brown the ground beef for 5-7 minutes.
  2. Add mixed vegetables and cook for an additional 3-4 minutes.
  3. Stir in cream of mushroom soup, rice or pasta, garlic powder, onion powder, salt, and pepper.
  4. Fold in half of the cheddar cheese, reserving the rest for topping.
  5. Transfer to a greased baking dish, top with remaining cheese, and bake at 350°F for 25-30 minutes.
