Ingredients

  • 2 medium sweet potatoes
  • 1 pound ground turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or your favorite)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Bake sweet potatoes for about 45 minutes until tender.
  4. Cook ground turkey in a skillet over medium heat for 7-10 minutes.
  5. Add black beans, corn, chili powder, cumin, salt, and pepper to the turkey; cook for another 5 minutes.
  6. Slice baked sweet potatoes open and fluff the insides.
  7. Fill each potato with the turkey mixture and top with cheese; return to the oven for 5-10 minutes until cheese melts.
