- 2 medium sweet potatoes
- 1 pound ground turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your favorite)
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake sweet potatoes for about 45 minutes until tender.
- Cook ground turkey in a skillet over medium heat for 7-10 minutes.
- Add black beans, corn, chili powder, cumin, salt, and pepper to the turkey; cook for another 5 minutes.
- Slice baked sweet potatoes open and fluff the insides.
- Fill each potato with the turkey mixture and top with cheese; return to the oven for 5-10 minutes until cheese melts.
Notes
- Serve with fresh cilantro for added flavor.
- Adjust spices to your taste preference.
