- 2 pounds of beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, peeled and cubed
- 2 cups beef broth
- 1 cup red wine (optional, but highly recommended)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste

Instructions
- Brown the beef in olive oil in batches for 5-7 minutes.
- Sauté onion for 3 minutes, then add garlic and cook for 1 more minute.
- Return beef to the pot and add carrots, potatoes, broth, wine, tomato paste, thyme, bay leaf, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and simmer, covered, for 2.5 to 3 hours.
- Remove bay leaf, adjust seasoning, and thicken if desired.
