  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 cups beef broth
  • 1 cup red wine (optional, but highly recommended)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Brown the beef in olive oil in batches for 5-7 minutes.
