Instructions

- In another bowl, combine peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Mix wet and dry ingredients together, folding in chocolate chips and nuts if using.
- Drop cookie dough onto a lined baking sheet, leaving space between cookies.
- Bake for 10-12 minutes until edges are golden brown.
- Cool for 5 minutes on the baking sheet, then transfer to a wire rack.
