- 1 tablespoon olive oil
- 1/4 cup chicken broth
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil and cook the ground turkey until browned.
- Add onion, bell peppers, and garlic; cook until soft.
- Mix in paprika, cumin, salt, and black pepper; stir for 1 minute.
- Add sweet potatoes and chicken broth; stir to combine.
- Transfer to a baking dish, top with cheese if desired, cover with foil, and bake for 25 minutes.
- Remove foil and bake for an additional 5-10 minutes until sweet potatoes are tender and cheese is bubbly.
