- 1 pound ground turkey
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet, add onion and bell pepper, and sauté until softened.
- Add ground turkey, breaking it up and cooking until golden brown.
- Stir in garlic, oregano, salt, and black pepper; cook for 1 minute.
- Pour in chicken broth, add orzo, bring to boil, reduce heat, cover, and simmer until orzo is cooked.
- Stir in diced tomatoes and heat through for 2-3 minutes.
- Garnish with fresh parsley and serve hot.

- For added flavor, consider using homemade chicken broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
