Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet, add onion and bell pepper, and sauté until softened.
  2. Add ground turkey, breaking it up and cooking until golden brown.
  3. Stir in garlic, oregano, salt, and black pepper; cook for 1 minute.
  4. Pour in chicken broth, add orzo, bring to boil, reduce heat, cover, and simmer until orzo is cooked.
  5. Stir in diced tomatoes and heat through for 2-3 minutes.
  6. Garnish with fresh parsley and serve hot.

Notes

  • For added flavor, consider using homemade chicken broth.
