This ground beef zucchini casserole is a hearty and delicious dish, perfect for a comforting dinner.

Ingredients

  • 1 pound ground beef
  • 3 medium zucchinis, sliced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté onion until translucent. Add ground beef and cook until browned.
  3. Stir in garlic, Italian seasoning, salt, and pepper. Cook for another minute.
  4. Slice zucchinis uniformly.
  5. In a bowl, combine the beef mixture, sliced zucchini, and diced tomatoes.
  6. In a greased baking dish, layer half of the zucchini mixture and half of the cheese. Repeat and finish with cheese on top.
  7. Cover with foil and bake for 20 minutes, then remove foil and bake for another 10 minutes until cheese is bubbly and golden.
