Ingredients

- 1 pound ground beef
- 3 medium zucchinis, sliced
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté onion until translucent. Add ground beef and cook until browned.
- Stir in garlic, Italian seasoning, salt, and pepper. Cook for another minute.
- Slice zucchinis uniformly.
- In a bowl, combine the beef mixture, sliced zucchini, and diced tomatoes.
- In a greased baking dish, layer half of the zucchini mixture and half of the cheese. Repeat and finish with cheese on top.
- Cover with foil and bake for 20 minutes, then remove foil and bake for another 10 minutes until cheese is bubbly and golden.
Notes
- For extra flavor, consider adding other vegetables or spices.
- Leftovers can be stored in the refrigerator for up to 3 days.
