  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (any color)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh lettuce and tomato for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent (3-4 minutes).
  2. Add ground beef to the skillet and cook until browned, breaking it apart (5-7 minutes). Drain excess fat if needed.
  3. Mix in bell peppers, chili powder, cumin, salt, and pepper; cook for an additional 5 minutes.
  4. Lay out tortillas and spoon the beef mixture onto each, adding cheese, lettuce, and tomatoes.
  5. Roll up the tortillas tightly and cut in half for serving.
