- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, chopped (any color)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh lettuce and tomato for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until translucent (3-4 minutes).
- Add ground beef to the skillet and cook until browned, breaking it apart (5-7 minutes). Drain excess fat if needed.
- Mix in bell peppers, chili powder, cumin, salt, and pepper; cook for an additional 5 minutes.
- Lay out tortillas and spoon the beef mixture onto each, adding cheese, lettuce, and tomatoes.
- Roll up the tortillas tightly and cut in half for serving.
