Delicious grilled chicken skewers marinated in a flavorful coconut and red curry sauce.

  • Total Time: 1 hour 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

Gather these simple ingredients to make your Grilled Thai Coconut Chicken Skewers:

  • 1 pound boneless, skinless chicken thighs
  • 1 cup coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, whisk together coconut milk, red curry paste, fish sauce, brown sugar, and lime juice.
  2. Cut chicken into bite-sized pieces, add to marinade, cover, and refrigerate for at least 1 hour.
  3. Preheat grill to medium-high heat and soak wooden skewers if used.
  4. Thread marinated chicken onto skewers, leaving space between pieces.
  5. Grill skewers for 10-15 minutes, turning occasionally, until fully cooked.
  6. Remove from grill, garnish with cilantro, and serve with lime wedges.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • For best flavor, marinate the chicken for longer if time allows.
