- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1 cup cream cheese, softened
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- Fresh parsley for garnish
Instructions
- Combine cream cheese, mozzarella, spinach, garlic, Italian seasoning, salt, and pepper in a bowl.
- Make a pocket in each chicken breast and stuff generously with the filling.
- Heat olive oil in a skillet and sear the stuffed chicken for 4-5 minutes on each side.
- Transfer to a preheated grill and cook for 15-20 minutes until the internal temperature reaches 165°F (75°C).
- In the skillet, add chicken broth, simmer, and stir in any leftover filling until creamy.
- Serve the chicken sliced with the cream sauce drizzled on top and garnish with parsley.
