Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Instructions

  1. Combine cream cheese, mozzarella, spinach, garlic, Italian seasoning, salt, and pepper in a bowl.
  2. Make a pocket in each chicken breast and stuff generously with the filling.
  3. Heat olive oil in a skillet and sear the stuffed chicken for 4-5 minutes on each side.
  4. Transfer to a preheated grill and cook for 15-20 minutes until the internal temperature reaches 165°F (75°C).
  5. In the skillet, add chicken broth, simmer, and stir in any leftover filling until creamy.
  6. Serve the chicken sliced with the cream sauce drizzled on top and garnish with parsley.
