This Greek Yogurt Zucchini Bread is moist, flavorful, and easy to make, perfect for any time of day.

Ingredients

  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • 1 cup Greek yogurt (plain or vanilla)
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • ½ cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grate zucchini and squeeze out excess moisture.
  3. Mix Greek yogurt, brown sugar, eggs, and vanilla until smooth.
  4. In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  5. Combine dry ingredients with wet ingredients until just mixed.
  6. Fold in grated zucchini and optional ingredients.
  7. Pour batter into greased loaf pan and bake for 50-60 minutes.
  8. Cool for 10 minutes in pan, then transfer to a wire rack to cool completely.

Notes

  • Make sure to squeeze out as much moisture from the zucchini as possible to avoid sogginess.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
