Ingredients

- 8 ounces of rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced (red or yellow)
- 1/2 red onion, finely chopped
- 1 cup Kalamata olives, pitted and halved
- 1 cup feta cheese, crumbled
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water for 8-10 minutes, then drain and rinse with cold water.
- Chop cucumber, bell pepper, red onion, halve cherry tomatoes and olives.
- Whisk together olive oil, red wine vinegar, oregano, salt, and pepper for the dressing.
- In a bowl, combine pasta, veggies, and feta cheese, then toss with dressing.
- Chill in the refrigerator for at least 30 minutes before serving.
