Ingredients

  • 8 ounces of rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced (red or yellow)
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water for 8-10 minutes, then drain and rinse with cold water.
  2. Chop cucumber, bell pepper, red onion, halve cherry tomatoes and olives.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper for the dressing.
  4. In a bowl, combine pasta, veggies, and feta cheese, then toss with dressing.
  5. Chill in the refrigerator for at least 30 minutes before serving.
