  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 cup uncooked orzo pasta
  • Juice of 2 large lemons
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes.
  2. Add garlic and cook for 1 minute, then pour in chicken broth and bring to a gentle boil.
  3. Add chicken breasts, reduce heat, cover, and simmer for 15 minutes.
  4. Remove chicken, shred it, and return it to the pot.
  5. Stir in orzo and cook for 10 minutes, then add lemon juice and zest, seasoning with salt and pepper.
