To create this deliciously tangy soup, you’ll need the following ingredients:
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 1 pound boneless, skinless chicken breasts
- 1 cup uncooked orzo pasta
- Juice of 2 large lemons
- Zest of 1 lemon
- Salt and pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Heat olive oil in a large pot and sauté onion, carrots, and celery for 5 minutes.
- Add garlic and cook for 1 minute, then pour in chicken broth and bring to a gentle boil.
- Add chicken breasts, reduce heat, cover, and simmer for 15 minutes.
- Remove chicken, shred it, and return it to the pot.
