- 2 pounds of baby potatoes
- 1 cup of crumbled feta cheese
- 4 tablespoons of olive oil
- 2 teaspoons of dried oregano
- 1 teaspoon of garlic powder
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the baby potatoes in half or quarters.
- In a bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and oregano.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 30 minutes, then sprinkle feta cheese on top and roast for an additional 15 minutes.
- Garnish with fresh parsley if desired, then serve warm.
