Ingredients

  • 2 pounds of baby potatoes
  • 1 cup of crumbled feta cheese
  • 4 tablespoons of olive oil
  • 2 teaspoons of dried oregano
  • 1 teaspoon of garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half or quarters.
  3. In a bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and oregano.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast for 30 minutes, then sprinkle feta cheese on top and roast for an additional 15 minutes.
  6. Garnish with fresh parsley if desired, then serve warm.
